Hi Everyone! I’m hosting today for Amanda while she is in the Dominican Republic with World Vision!! You can follow her story here. Please keep & the rest of the team she’s traveling with in your prayers. They are scheduled to be back home on Friday. I know they’ll be a blessing to those in the Dominican as well as us here with their stories once they return! I know I’m looking forward to hearing the stories & also about Genaro!
And so now to change topics very abrubtly … let’s talk about eggs, shall we?
Amanda first got me thinking about this post with her Prairie Bread Recipe earlier this week.
If you’ve got eggs in the house you can pull off alot!! The flip side of course, if you don’t … you can’t!
Here’s my Top Ten Favorite Egg-y Breakfast Meals:
1. Scrambled with cheese: Yep, just good old, plain scrambled with cheese. I’m not much of a fried egg kind of girl.
2. Bird’s Nest / One Eyed Egyptian: They’re called a variety of different things, but yummy sums it up for me! A slice of bread and an egg & you’re good to go. Although I’m not much of a fried egg girl, this I think is delicious!! Try this recipe version from Pinch My Salt.
3. Egg Omelet: The possibilities are endless. Ham, Cheese, Mushrooms & Onions are my favorite ingredients. How do you like your omelets?? (And with complete disclosure, I’ll eat whatever option my husband will make. I stink at flipping omelets – he on the other hand has it mastered to perfection!)
4. Egg on Rice: This is one of those late night/early morning breakfast options. Cook a little 5 minute rice, place some cheese over the rice & then top it off with some scrambled eggs. Yum!
5. Egg Sandwich: Some yummy scrambled eggs between two slices of bread – with or without cheese & you’re good to go for a yummy meal! I like to eat my egg sandwich with UNtoasted bread … I don’t know why, I just think it’s better that way.
6. Egg’s Benedict: Oh how I love thee!! Amanda’s dad makes the best Egg’s Benedict I’ve ever had. Seriously. I don’t think restaurants compare!! I know Amanda has talked about them on her blog before but I can’t find it anyway. I’m not even going to link to anyone else … because his are just that good!!
7. Crustless Quiche: I’ve been making these alot lately in the mini muffin tin. They’re easy to freeze & then perfect to warm up in the microwave for a quick & easy breakfast or even afternoon snack for the kids.
8. Egg Burrito: Honestly the sound of these things gross me out. But they’re actually pretty good. ONLY if they’re home made. The thought of McDonald’s making them still grosses me out. Basically yummy scrambled eggs with anything you like, wrapped up in a flour tortilla.
9. Breakfast Egg Casserole: Because most anything casserole-ish is good!! Especially with bacon & cheese.
10. The Flying Biscuit Love Cakes: I’m certain I butchered the name of that one but I first had this at our Annual Sisterchick Christmas Party. But think black bean cakes, gooey eggs, sour cream, feta cheese … yum, yum, yum! And they even post the recipe!
So there you have it. Are you hungry now?? I am!!

Yummmmm…I love me some eggs!
My favorite creation: fry an egg, put in between two pieces of bread buttered on the outside, add some ham and cheese, then grill the entire sandwich up. It’s like a Fried Egg Ham & Grilled Cheese Sandwich. Tasty (and not at all fattening…nooooooo….).

Mmm. Egg sandwiches have always been a part of my life. We love to have breakfast for dinner.

I LOVE fried egg sandwiches. Texas Toast with lots of butter, cheese, bacon, and a fried egg in the middle… the LifeWay cafeteria actually made the best ones. I kind of miss it!

ooooh my goodness, eggs benedict!! Pioneer Woman has a tutorial on how to make them…I read it recently and it make me gush. I need to learn how to poach an egg.

I’m totally hungry now! I’ve been wanting to make those little muffin size quiches myself. And the egg and rice sounds really good. I’ll have to try that.

Mmm! I’d have to agree with the Bird’s Nest (which we call Egg In A Poke – it cracks me up how many diff names there are for this!
and any egg cassarole! Yum-my!

Eggs are one of my favorite foods! But, I pretty much make them the same way every time…omelets. For some reason making an omelet is much easier than scrambling eggs to me. I guess it’s just because I can let it sit and do nothing except flip!
